Anyone who has ever been to a carnival or state fair knows that there are certain culinary mashups unavailable any time or any place else (The current trend is for fried anything, including jello). Sausage on a roll and ice cream in a waffle cone were creations born of necessity at carnival type events. So why not Pizza-In-A-Cup? What started as a spoof on the aforementioned forerunners of fast food took on a life of it's own thanks to the 1979 comedy, "The Jerk", which starred Steve Martin (Navin) and Bernadette Peters (Marie)

Put on the movie, invite a few friends over, and serve up Pizza In A Cup!
This whole thing started earlier today when our Sunday school teacher mentioned buttermilk biscuits. Hmmm.. that sounded pretty good. But you can't just have biscuits, they need to be served with something or as the base of something. When we got home, I reached for a pouch of Buttermilk Biscuit mix. According to the directions, I needed 4 cups to make a batch of biscuits, but only had 3. So, I added one cup of Cornmeal muffin mix in place of the last cup of biscuit mix and followed the directions on the biscuit mix pouch (4 cups of mix, 1 cup of water). The products we used were from JoyOfLifeFoods.com but you could probably use any Buttermilk Biscuit Mix and Cornmeal Muffin Mix. We liked this particular brand as everything was right in the mix and that made for fast preparation. You may also want to try to spice it up a bit with pizza seasoning.
Instead of making biscuits, I rolled the dough out onto a 12" x 17" baking pan (cookie sheet) that had been generously coated with olive oil, then rolled it until it covered the entire pan. It was rolled quite thin. Then, into the oven at 425° for about 12 minutes. I took my buttermilk/cornmeal crust out just as it started to brown. It had risen to about 1/2" thickness-perfect for pizza.
Next, the toppings. I kept it pretty simple-just pizza sauce and mozzarella cheese, but feel free to experiment. I was a bit concerned that the crust would just soak up the sauce, but that did not happen. a few minutes under the broiler, and we had a nice, very authentic looking pizza.

For the real "Cup O Pizza" experience, you need utensils
The final result was a very tasty, very cheesy pizza with a very palatable texture. The cornmeal added just a touch of sweetness and body to the crust. But it's not the kind of pizza you can pick up and eat. The biscuit/cornmeal crust is far to crumbly. It was at this point that my wife chimed in, "This would be perfect for Pizza-In-A Cup." We began cutting the pizza into small squares, about 2" x 2" and scooping them into cups. Next, a little extra mozzarella and into the microwave for just long enough to melt the cheese.
